In the Kitchen

My dear mother and I were making supper (some people call it dinner, but I do mean the evening meal :D) tonight and she taught me to make fried chicken. I didn't realize it was so simple, and tastes so delicious. I realize deep-fried stuff is pretty unhealthy for a person, but we don't have it often. :D
(we had our chicken with mashed potatoes and mixed vegetables, just a yummy side suggestion) 

For those of you that may not know how and are interested in making fried chicken, here's a quick, easy recipe. 

The S. Family Fried Chicken 
 
~Ingredients: 
The amount of chicken breasts you will use depends on the size of your family (i.e. we have 8 eating people {plus one baby} in our family, so we used 8 chicken breasts, but your family may want two each :D)
Flour
Salt
Pepper
Eggs
Milk
 Vegetable oil

~ Directions:
Cut the package of chicken breasts open and put each breast on a plate. 

Crack two eggs in a bowl, then add a few splashes of milk into that same bowl, and whisk the two ingredients together, then set aside.

Put 1 1/2 cups of flour in a bowl, and sprinkle in a bit of salt and pepper. Mix this together with a spoon.
 Put                vegetable oil in a frying pan, and turn the burner on to 5. Let heat up until you see the slightest bit of movement in the oil. Warning: Do not overheat oil. Once our whole family (our immediate family, plus cousins, grandparents, etc.) was getting together for mother's day and oil caught fire because we let it overheat and did lots of damage to our aunt and uncle's house. Put it this way: they had to live in a camper for 9 months,  while their house was getting repaired, while Auntie Jo was pregnant. Not fun. That's what trouble overheated oil can cause. This oil should be ready before the breasts are ready to cook, so turn heat down. 
 
Do the following with each chicken breast: Dip in flour mixture, then egg mixture, then flour mixture again, then set on a plate.  Do this with each chicken breast you use. 

Put the chicken breasts in the pan of oil. Be sure to be very careful and gentle as you're putting them in. Do not drop them in, as this will cause oil to splash and possibly catch fire. Cover the pan. Let the breasts cook for 5 minutes on one side, then flip gently the breasts to the other side, and let them cook for 5 minutes. Then take the chicken breasts out of the frying pan and put them on a pan, and stick them into the oven (heated at 250 degrees) until the rest of your food is ready, then take out and serve. Enjoy!
